The Plan
Summary
We want to provide Burquenos, young & old, an out of this world gourmet peanut butter & jelly inspired sandwich experience. S’wich It Up uses local ingredients and will provide gluten-free, contaminant-free products for those with special dietary needs. Additionally we don't want to exclude anyone with any dietary need, so we will do our best to accommodate you and your family.
Location
S'wich It Up will be a food truck operating in Albuquerque, NM. Being mobile will allow us to best serve the community. We will serve at a diverse set of locations which will change daily. We want to make sure that everyone has access to our delicious and affordable sandwiches, so we will post notifications on our website and via social media daily. Additionally, we are open to suggestions! If you want us to show up at your place of work, school, or party, just let us know!
Menu
The S'wches are peanut butter and jelly inspired sandwiches, meaning they will consist of tasty spread combinations. Our menu will rotate seasonally. Here are a few of our creations:
A classic peanut butter and jelly sandwich!
Granola, mashed banana, and pb
The S'more: nutella, pb, and fresh roasted marshmallow
Honey-lavender pb with green chile jelly
We will also have healthy sides such as veggie sticks and apple fries that come with a nut butter dipping sauce. Additionally, we are working hard to develop other tasty nut butter, jams, jellies, and spreads. We will have a variety of breads that will be paired with each sandwich, and we will always have a gluten-free option on the truck.
Atmosphere
To provide the best atmosphere, we will try to be at locations with seating close by. We will also be located at parks and near the museums and zoo to give your family the afternoon picnic feel.
Marketing Strategy
Our marketing strategy will be to create a community. We don't just want customers, we want people to engage with and share in our success. We plan to promote S'wich It Up through a variety of methods:
This campaign, through Foodstart, will help to build word of mouth interest in our truck. It will also provide us the opportunity to create and engage our community and get feedback on what you want to eat and where you want us to be!
Social media will allow us to provide daily updates on location and menu specials, and we can reward social followers with exclusive specials. Additionally we plan to share recipes and inside looks at our business.
Groupon deals and Alibi Bucks will help drive sales and name recognition among our customers. By providing these deals, we hope to make our food even more accessible! Currently, no food trucks make use of this opportunity.
Press publicity through newspapers like The Daily Lobo, The Weekly Alibi, and The Albuquerque Journal we can create a buzz around our concept.
Joining the ABQ Food Truck Co-op allows us to reach an established list of over 2,000 food truck lovers.
We will also do food sampling and culinary demos to give customers the opportunity to try our sandwiches and experience our creativity. This will help build a word of mouth campaign, which will be our most effective form of marketing.
Financial Plan
We need about $25,000 to secure our first food truck, and an additional $10,000 to stock it with all the goodies necessary to provide you with tasty S'wiches. We are asking to raise $5,000 through FoodStart, which will help us gain the traction we need to get this truck moving! The entire cost of the business will be come from an SBA loan provided by the Loan Fund and from our own pockets.
Management
Anthony Salvagno is a PhD Physicist and won 2nd place in the UNM Entrepreneurial Challenge for the S'wich It Up business plan. He is also an accomplished graphic designer and loves to experiment with his creativity. He even has a pet T-rex, who may visit the truck from time to time.
Jason Salvagno is a graduate of the Culinary Institute of America, the premiere culinary school in the country. He has been the head chef of the Falcon's Nest and a sous chef at Marche Burette at Omni Amelia Island Plantation Resort. He's always looking for new flavor combinations to tickle your palate!

We will also be providing catering services. For our catering services, the menu will be discussed with you and does not have to come from the S'wich It Up menu. We want your event to be the talk of the town, and we are prepared to amaze you with our culinary skill!
