Smith Jean St. Juste will own and operate the Company. Chef St. Juste graduated from Johnson & Wales University with a degree in Culinary Arts, followed by several years working with prominent hotel chains in the Stamford area including Marriott and Westin. His managerial and culinary expertise helped him launch a successful catering company, followed by the launch of Maddy’s Food Truck. A native of Haiti with a flair for Haitian Creole comfort cuisine, Chef St. Juste is eager to launch the area’s only devoted Caribbean-American full-service fusion restaurant that maximizes his proficiencies in institutional and batch cooking,catering, presentation, hospitality, and food safety.
