I am a Cordon Bleu pastry chef. I have owned and operated Sweet Spot Bakery-Deli, LLC, for six and a half years. I started the bakery in July of 2007, just before the economy went bad in December of 2007. We have survived by providing good food. I have recently been asked by the supervisor of the new psychiatric hospital kitchen to provide bread and pastries for the hospital. I need to expand to a larger location in Junction City, Oregon, in order to accommodate their request and expand my business. While the economy is not great, yet, I feel this is the opportune time to move the business to a better location.
