Caity Wallace is an artisan baker with over 20 years of practice, specializing in products in the style of Ireland and the United Kingdom. Her signature scones have appeared in farmer's markets and independent food stores in California, Oregon and Florida. Caity has self-established and managed three successful independent businesses featuring her products and hospitality: Caitlin's Cottage and the Four Crowns Pub in Tampa, Florida (c.1986), and the original Wilde Thistle Cafe in Ashland, Oregon (c.1993).
